Quick Saucy Peanut Noodles

This recipe is a glorified version of a meal I used to make in college all the time! Using staple ingredients in the house, the whole dish comes together in under 15 minutes from start to finish.

What you will need:

For the Sauce:
1/2 cup creamy peanut butter
1/2 cup soy sauce
1/4 cup chili garlic sauce
1-2 tablespoons honey
1/2 cup hot water

For everything else:
1 packet of ramen noodles per person
Frozen Stir Fry vegetables
1-2 tbsp Vegetable oil
2 garlic cloves, finely minced
1/2 inch of ginger, finely minced
toasted white sesame seeds

Preparing the noodles:

  • Prepare the sauce by combining all the ingredients listed (except the hot water) in a bowl. Add in the hot water slowly while whisking until the sauce is slightly running. Then put aside as we won’t be needing this till the last step.
  • Mince the garlic cloves and ginger. Measure out about 3-4 bowls of frozen stir fry vegetables.
  • Start heating up a pot of boiling water for the noodles. Once the water boils, cook your noodles per the instructions on the package. Drain and rinse the noodles once they are ready!
  • In another pot, heat up a large pan with vegetable oil. Once heated, add the vegetables first. Let them cook on high heat for a few mins and then turn the heat to medium and add in the garlic and ginger. Turn the heat to low and cover to let the vegetables steam for a few mins.
  • After all the components (sauce, noodles, vegetables) have been prepared, serve fresh! You can combine them all in the veggie pan or serve separately. Garnish with toasted sesame seeds on top for an extra nutty flavor!

Some additional tips about the recipe:

– If you want to swap out the ramen noodles for any kind of noodle or carb – spaghetti, rice noodles, pasta, or any type of rice!
– Add in any other vegetables you prefer. I like to add in onion and baby corn in addition to the stir fry packet. You can also choose mushrooms, tomatoes, or zucchini.
– If the sauce thickens up while preparing the rest of the meal, slowly add in a few spoons of hot water while whisking to thin it out.
