Quick Fix Tacos

This is the perfect recipe when you need a meal that can be assembled in under 15 minutes and uses a lot of ingredients often found in your fridge or pantry. While easy to assemble, they also taste delicious! With a variety of textures and flavors this is a recipe you can put together in between meetings or classes!

I like to make these tacos when I have to put together something quick before going back to meetings and am craving some Mexican flavors. Usually, 3 tacos fills me up well but a good range is 2-4!

What you will need:

  • small tortillas: either corn or flour
  • black bean patty: cooked
  • any leafy green: shredded or ripped to pieces
  • salsa
  • red onion: diced
  • avocado: cut into small pieces
  • shredded cheese

Preparing the tacos:

Cook the frozen black bean patty on the stove per the instructions on the box. I prefer the Chipotle Black Bean Patties from Costco, but feel free to use any patty you like.

Heat up the tortillas on the stove. Lightly spread some oil for added flavor before toasting. I like to use corn tortillas for their texture and have found that they are less likely to get soggy if my tacos sit around for a few minutes.

Place the tacos on a plate and begin assembling your filling. Start by crumbling or cutting up the patty into small bite size pieces and place 4-5 cubes in a line on the tortillas.

In a similar manner, add your leafy greens – I always prefer kale for the flavor and texture, but any leaves will work.

Continue to layer a spoonful of your favorite salsa, red onion, avocado, and shredded cheese. Set up tacos next to each other so the filling does not fall out and enjoy!

**Optional: add a dollop of chipotle mayo as the first layer of your tortilla before the black bean patty for some extra tangy flavor!
